I owe a debt of gratitude for this soup to Chef Jules, possessor of a right away sadly defunct nutrient weblog called Gourmet H5N1 Go-Go. Not exclusively a sort person, Chef Jules is a wonderful chef too shared this wonderfully elegant too creamy cannellini edible bean soup amongst a Fontina cheese, lemon too thyme gremolata. I tinkered amongst only about of the ingredients from his master copy recipe — substituting fresh spinach for carrot, too a handful of dried cherry-red chilies instead of one-half a fresh 1 to give it a piddling extra kick. I wouldn't move at all embarrassed to serve this rich, attractive too delicious soup to anyone on whatever occasion. I dished this upwards amongst only about arancini for a thoroughly satisfying meal. H5N1 purist would strain the puréed soup through a fine sieve, equally Chef Jules had suggested, to give it a perfect creaminess, but I suppose I'm non actually a purist, too I would loathe to bring lost those piddling light-green flecks of spinach besides.
I should add together that this was the starting fourth dimension time I've e'er tried a gremolata, since they're to a greater extent than ofttimes made equally a topping for vegetable stock
- 3/4 loving cup Fontina cheese, really finely grated
- 1 tablespoon finely grated lemon zest
- 1 tablespoon fresh thyme leaves
- 2 cloves garlic, finely minced
